Italian Stuffed Zucchini Boats

Ingredients:

  • 4 medium zucchini

  • 1 lb ground Italian sausage (or ground beef)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup marinara sauce (I love Rao’s brand!)

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F

  2. Cut the zucchini in half lengthwise and scoop out the inside, leaving about 1/4 inch of zucchini around the edges. Place the zucchini halves in a baking dish & place in oven to soften while you cook the meat.

  3. In a large skillet over medium heat, cook the ground sausage or beef until browned. Drain any excess fat. Add diced onion and garlic, cooking until soft, about 2-3 minutes.

  4. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Let it simmer for about 5 minutes to allow the flavors to combine.

  5. Spoon the meat mixture into the hollowed zucchini halves

  6. Sprinkle mozzarella and Parmesan cheese on top of each zucchini boat.

  7. Cover the dish with foil and bake for 10 minutes, or until the zucchini is tender.
