Protein Bagel

Ingredients:

  • 1 cup self-rising flour

  • 1 cup full-fat cottage cheese

  • 1 large egg beaten, for egg wash

  • Toppings: sesame seeds, everything bagel seasoning, shredded asiago cheese, or poppy seeds

Directions:

  1. Preheat oven to 375

  2. Line a large baking sheet with parchment paper

  3. Blend cottage cheese in a blender until smooth

  4. transfer to a bowl + add flour. Mix until completely combined - using hands if needed.

  5. transfer the dough to a generously floured surface. Knead the dough 8-10 times, until smooth.

  6. Roll the dough into a ball and divide it into 4 equal balls.

  7. Roll each ball out into a 6-7-inch rope, about 1-inch thick. Join the ends to make a circle and pinch the seam tightly to seal. Brush the tops with a beaten egg and top with your seasoning of choice.

  8. Bake for 25-30 min or until golden brown. Let bagels cool for 15 minutes before slicing.

**Store fresh in an airtight container at room temp for up to 4 days.
