Ground Beef Sweet Potato Skillet

Ingredients:

• olive oil

• 1/2 c diced onion

• 1 lb lean ground beef

• 5 tsp chili powder

• 2 tsp ground cumin

• s&p to taste

• 1 tsp grated garlic

• 2 c cooked diced sweet potatoes (I use the frozen steamable bag to speed this recipe up!)

• 14.5 oz can fire roasted diced tomatoes

• 4 oz canned diced green chiles

• 1/2 c shredded cheddar cheese

Directions:

1. add olive oil to pan & heat up

2. add ground beef + diced onion. cook through.

3. add in ALL other ingredients

4. cook until everything is warm — top with cheese.

5. serve + enjoy!
