Summer Greek Salad
Serves: 4
Ingredients:
2 cups cherry tomatoes
1 cucumber, cut
1 green bell pepper, chopped
½ cup feta cheese, crumbled
⅓ cup red onion, chopped
⅓ cup kalamata olives
½ tsp oregano
¼ tsp dijon mustard
1 garlic clove
Ground black pepper
¼ tsp sea salt
¼ cup olive oil
3 tbsp red wine vinegar
Directions:
In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, dijon mustard, salt, and ground pepper to make the dressing.
In a large bowl, add the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and gently toss. Sprinkle with a few generous pinches of oregano. Enjoy!
