Summer Greek Salad

 Serves: 4

Ingredients:

  • 2 cups cherry tomatoes

  • 1 cucumber, cut

  • 1 green bell pepper, chopped

  • ½ cup feta cheese, crumbled

  • ⅓  cup red onion, chopped

  • ⅓  cup kalamata olives

  • ½  tsp oregano

  • ¼  tsp dijon mustard

  • 1 garlic clove

  • Ground black pepper

  • ¼  tsp sea salt

  • ¼  cup olive oil

  • 3 tbsp red wine vinegar

Directions: 

  1. In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, dijon mustard, salt, and ground pepper to make the dressing.

  2. In a large bowl, add the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and gently toss. Sprinkle with a few generous pinches of oregano. Enjoy!
