Pumpkin Spice Overnight Oats

Ingredients:
2 Tbsp pumpkin puree
½ Cup oats
⅔ Cup coconut milk
1 tsp pumpkin pie spice
2 tsp pure maple syrup
¼ tsp vanilla extract
Walnuts, for toppings
Directions:
In a mason jar combine coconut milk, oats, pumpkin puree, pumpkin pie spice, vanilla extract, and maple syrup. Mix until completely combined.
Put lid on and store in refrigerator for 8 hours (or overnight)
Stir and add a little more coconut milk for consistency (if you want) and warm up in the microwave.
Top with walnuts and enjoy!
