Pizza Stuffed Peppers

Serves: 2-4

 

INGREDIENTS

  • 2 bell peppers (color of choice, halved with seeds removed)

  • 1 jar of Pizza sauce

  • 1 cup of mozzarella cheese

  • Pepperoni (or salami slices)

  • Bacon (cooked and diced)

  • 2 tsp Italian Seasoning

  • Optional: olives, diced onions, artichokes

 

DIRECTIONS

  1. Preheat the oven to 400 degrees.

  2. Place halved peppers in a pot of boiling water for 4-5 minutes, until they start to soften.

  3. Remove from water and place on a paper towel to dry off.

  4. Place the peppers on a nonstick baking pan, cut side up.

  5. Layer mozzarella, pizza sauce, pepperoni, and bacon. Repeat until full and add any additional toppings. Top with mozzarella cheese and italian seasoning.

  6. Bake for 10-15 minutes, or until cheese is melted and golden brown. Serve + Enjoy!
