Chunky Monkey Overnight Oats
Ingredients:
1/3 cup rolled oats (gluten free, if needed)
2 tsp chia seeds
2 tsp pure maple syrup
3/4 cup coconut milk
1/2 large banana, diced
2 Tbsp almond butter
1/2 Tbsp shredded coconut
1 tsp mini chocolate chips or cacao nibs
Optional: crushed peanuts or a sprinkle of extra chocolate chips or cacao nibs, to serve.
Instructions:
In a mason jar, combine oats, chia seeds, syrup, milk, banana, almond butter, coconut, and the chocolate chips or cacao nibs. Stir to combine.
Cover and refrigerate at least 30-40 minutes, or overnight.
To serve, add a little drizzle of milk, if needed, then top with remaining banana, a little drizzle of peanut butter, and a sprinkle of coconut and chocolate chips/cacao nibs.
