Cheesy Chicken Taquitos

Ingredients:

  • 8oz shredded cheddar cheese

  • 1 lb chicken breasts 

  • 1 small bunch cilantro, minced

  • 2 cups corn

  • 1 pint grape tomatoes, halved

  • 2 limes

  • ⅔ cup plain greek yogurt

  • 1 medium red onion, diced

  • 12 small corn tortillas (or bib lettuce for no carbs)

  • Chili Powder

  • Cumin

  • Olive Oil

  • Garlic Powder

  • Salt

Instructions:

  1. Preheat oven to 425 degrees.

  2. Pat chicken dry & cut chicken into bite sized pieces.

  3. Heat oil in skillet on medium-high heat. Add the chicken and season with spices. Stir-fry until golden brown and cooked through. Remove from heat.

  4. Warm tortillas in the oven for a few minutes & remove right before they get too hard to roll.

  5. Coat a large pan with oil.

  6. Fill tortillas with chicken and cheese. Roll tightly and place seam-side down in the pan. Bake in the oven for about 10-12 minutes, or until golden and crispy.

  7. Mix corn, halved grape tomatoes, diced onion, minced cilantro, juice of one lime, and salt in a bowl. Toss to combine.

  8. Juice the other lime in a new bowl, add yogurt, and whisk to combine.

  9. To serve, divide taquitos between plates, top with pico de gallo salad, drizzle with yogurt crema and ENJOY!

**Serve on bib lettuce for a carb-free dinner!
