Bell Pepper Nachos

INGREDIENTS

  • olive oil spray

  • 1 lb lean ground beef

  • 1 clove garlic, minced

  • 1/4 onion, minced

  • 1 tsp garlic powder

  • 1 tsp cumin 

  • 1 tsp salt

  • 1/4 cup tomato sauce

  • 3 colored bell peppers, quartered and seeded 

  • 1 cup shredded Cheddar cheese

TOPPINGS (optional):

  • 2 tbsp plain greek yogurt

  • 2 tbsp sliced black olives

  • 1 jalapeno, sliced thin 

  • chopped cilantro, for garnish


INSTRUCTIONS

  1. Preheat oven to 400F and line a large baking sheet with parchment paper. Lightly spray with oil.

  2. Spray oil in a medium nonstick skillet over medium heat. Add onion, garlic and cilantro and saute about 2 minutes. 

  3. Add ground beef, salt, garlic powder, cumin and cook meat for 4 to 5 minutes until meat is completely cooked through. 

  4. Add tomato sauce and mix well + simmer on medium heat for about 5 minutes. Remove from heat.

  5. Meanwhile, arrange mini peppers in a single layer, cut-side up close together.

  6. Fill each with cooked ground beef mixture, then top with shredded cheese.

  7. Bake 8 to 10 minutes, or until cheese is melted.

  8. Remove from oven and add your toppings! Serve + Enjoy!!
